The music proper to liturgical worship is Gregorian Chant, and this hymnbook provides a selection of chant with organ accompaniment.
Singing hymns in English is a more recent innovation in Catholic liturgy. R R Terry did great work in wedding metrical translations to tunes.
The introduction discusses the divergence of tunes from the original compositions. It makes an enlightening read.
