It could be because a) coloring in puts less stress on working memory (a mental mechanism that people use to sustain attention) - Ostensibly, it is easier to remain focused if an activity is right in front of you b) the complexity of the selection of coloring materials is sufficient to prevent people drifting off into worrying or ruminating c) the process of coloring in requires focus to keep colors within the lines.
